This is a traditional Romanian spread made with eggplant, and seasoned with onion and garlic. It has a light smoky flavor and a smooth consistency. Is great on rustic bread or a simple toast. A fancy way to serve it is stuffed in tomatoes and sprinkled with parsley leaves or a black olive.

Roased egg plant

The eggplant is a wonderful vegetable, but if don't know some "secrets" the product could be a fiasco.
Prepared like this, the eggplant could be a very tasty spread ( onion could be add or not) or could be enjoyed as a very special snack.
