Cevapi are a traditional skinless meat sausage which is a specialty of the Balkans and Bosnia-Herzegovina. Small in size but big in flavor, their popularity has spread to the New World! Cevapcici (Beef and Pork Skinless Sausage) is a type of skinless sausage made with optimal combination of beef and pork meat, found traditionally in the countries of the Balkans. They are considered a national dish in Bosnia and Herzegovina and Serbia and are also very common in Croatia, Montenegro, Albania, Slovenia, as well as in Macedonia and Bulgaria. Cevapi has its origins in the Balkans during the Ottoman period, and represents a regional specialty similar to the Turkish kebab. They make great appetizers. They are usually served of 5-10 pieces on a plate or in a special bread lepinje or somun.

The recipe uses select cuts of pork, beef and veal, in addition to a special blend of spices and seasonings typical of this style of cevapi. Enjoy these sausages any time of day as a "meze" appetizer on their own or with traditional accompaniments of chopped yellow onions, ajvar or kaymak.
